Burford welcomes a delicious new patisserie at peak tourism season

A new patisserie has opened its doors on Burford high street.

Hugo Lovage Patisserie is run by Michelin-trained pastry chef Cindy Kosmala who has worked withrenowned chefs such as Philip Howard, Gordon Ramsey, Matt Abe and Clare Smyth. She has also worked at Soho House, Chez Bruce and Restaurant Gordon Ramsey.

She will be hand making and selling baked cheesecake, bavarois, eclairs, cookies Battenburg and her speciality – meringue towers.

Cindy, 36, is originally from South Africa and moved to the Cotswolds with her chef husband Hubert, who is the head chef of the award-winning Swan at Swinbrook just up the road. It has been their dream to open their own business. “Baking and cakes are about family and this is our own family business,” she said. “We have three young children, Niko 12, Hugo four and Elliott who is only 11 months old, they are all looking forward to getting involved, maybe not Elliott, just yet. The cookies will be of interest to them and other children as we are making cookie sandwiches with a self-decorating kit.

“The adults and the kids will want to try our little meringues that we will be making to eat like popcorn. We will be varying the cakes and fridge patisseries seasonally so keep an eye on the shop for different ideas and themes.

“Burford has been incredibly welcoming and it is great to be in such a vibrant Cotswold town,” she said.

The Cotswolds is experiencing a bumper year for tourism, thanks to the Pandemic stay-cation. In a normal year, it attracts 38 million visitors a year, with Burford being one of its most visited.
